Grapes: 100% Nero di Troia
Production area: The vineyard is located in a fascinating land, close to the Gargano and the sea, in the countryside of Cerignola (Fg).
Training: Spurred cordon-trained vines, with a planting density of about 5,000 plants per hectare, on a mainly calcareous soil.
Vinification: The bunches, chosen from the best strains of the vineyard, are harvested between the end of September and the first ten days of October. After a careful selection of the grapes, they are destemmed and subjected to a very light soft pressing. Then, they are traditionally vinified, for 20 days at 22°. At the end of the malolactic fermentation, the wine is decanted into large terracotta amphorae for 8 months. Finally, without any clarification, the wine is bottled and left to age for at least 3 months before being placed on the market.
