PRODUCTION TECHNOLOGY Once harvested, the Brachetto grapes are de-stemmed and transferred to a pneumatic press for cryomaceration. The task of cryomacracation is to extract and fix both coloring and aromatic substances. At the end of this first operation lasting 5/6 hours the grapes are softly pressed. The product obtained (grape juice) is filtered and placed in a cold room at a temperature of 0°C in order to inhibit the fermentative activity. After which each single batch will be introduced into an autoclave which allows the carbon dioxide to be retained and the product to be heated up to a temperature of 15 °C while still totally sugary. The purpose of this intervention is to favor the start of fermentation which will last up to 6.0% vol. of alcohol. The product, which has now become Piemonte Brachetto, is cooled to 0°C to block fermentation. After the month of October, the bottling takes place in the first days of November.
TASTING NOTES A purple ruby red, with fragrances of Wild Rose and Strawberry, floral and musky with sensations of small berries. Balanced aromatic sip with an intense flavor with balsamic notes. The olfactory perception of "nutmeg" is unique.
GASTRONOMIC COMBINATIONS Served at a temperature of between 8 and 10 °C in crystal glasses, it accompanies desserts and is excellent with fresh fruit.
