SOIL TYPE Clayey soil.
VINIFICATION Vinification in red with maceration with emerged cap at controlled temperature, with repeated daily pumping over. Complete development of the malolactic fermentation following the alcoholic one.
COLOR Intense ruby red, with violet reflections. BOUQUET Intense and persistent fruity notes of wild blackberry, raspberry and cherry.
PAIRINGS Ideal with local sausages and tajarin with meat sauce, it also goes well with fresh cheeses.
TASTE Fine and elegant, pleasant to drink, it owes its balance to the union between the acid vein and the fullness of the body. Crunchy wine.
AGING Aging in wood for a period of five months, partly in second and third passage barriques and partly in Slavonian oak barrels. Short period of aging in the bottle before release.
