Wine produced from organically grown Nero d'Avola grapes on the Sambuca di Sicilia estate, in the province of Agrigento. The vines are covered with grass and set on a gentle hill (300 meters slm ) which is particularly ventilated and characterized by clayey soils. The vineyard is located in the area of the company most exposed to winds and currents, so as to minimize the pressure of cryptogams.
Cultivated according to the Guyot system with an average planting density of 4,500 plants per hectare, the vineyard is harvested in the first week of September. The grapes at perfect aromatic and polyphenolic ripeness are destemmed and fermented with the skins for 6-8 days at 22-24°C. The malolactic fermentation takes place with selected bacteria and the maturation in steel for 10 months. A small part of the wine is aged for 6 months in French oak barriques. . Pairings It goes well with pizza, risotto, baked pasta dishes, red meats, lamb and savory cheeses. Due to its pleasant structure and intense aroma, Nero d'Avola goes perfectly with a typical dish of Sicilian cuisine, spaghetti alla Norma, with aubergines and smoked ricotta. It stands out for its particular characteristics of freshness and fruitiness. Deep ruby red with pleasant violet reflections.
