The Pinot Noir of Borgo Magredo comes from grapes harvested around the first week of September. Once in the cellar, they are destemmed and the skins remain in contact with the must for 5 days before being pressed. Fermentation takes place in steel containers kept at a controlled temperature. Part of the wine completes the malolactic fermentation in barrique and is then blended with the wine which is aged in steel. This is followed by bottling and rest in glass for at least two months.
Color At sight the wine has a not particularly intense red colour. Perfume Intense aromas of small red berried fruits, cherries and wild violets. Taste Flavor with good structure, it is easy on the palate due to its softness and roundness. Balanced in each component, it has a good persistence and an excellent aroma. Matching Wine to pair with first courses (cheese soups), short and medium-aged cheeses (tome and fontina cheese), fondues, roasted red and white meats and baked fish. It is advisable to serve it at a temperature of 16-18°C.
