We have pursued a careful work of enhancing the old native vines of our land: in fact we have been making wine from 100% Granaccia grapes only since 2001. The country yield is low and the production of bottles limited but the organoleptic characteristics denote it as an important wine that deserves to be more valued. Characteristics Dry red wine with a clear appearance and an intense ruby colour. On the nose it is intense and persistent, ample, fine, with hints of small forest fruits: it includes blueberries, blackberries, ripe pomegranates and raspberries. The taste is dry, quite fresh and sapid, rightly tannic, warm, full-bodied, continuous. Fruity aftertaste with slight boisè. Harmonious and with great personality. Grape variety and production area It is produced with grapes from the Granaccia vine harvested in the company vineyards of Ortovero and "Ponterotto". Training system Spurred cordon. Total acidity Min 4.5 g/l Dry extract Min 20 g/l Gastronomic combinations Dry red wine suitable to accompany dishes such as tagliatelle with mushrooms, juniper thrushes, guinea fowl with mushrooms, roast duck, game and lightly aged cheeses. The wine, with its intense aroma, combined with an extraordinary velvet, enhances and exalts the complex aromas and compound flavors of the dishes listed. How to serve and keep it It is served at a temperature of 18°C, in large ballon-shaped glasses, to better appreciate the intense bouquet and with tall stems. It gives its best in a period ranging from two to four years. It must be kept lying down in the lowest compartments of the cellar, at a constant temperature between 11 and 14°C.
