Characteristics Ruby red wine with purplish edges. Intense fruity aromas of currant and strawberry on the nose with sensations of spices. The taste is dry, full and persistent with a spicy vein. Soft tannins on the palate and a good concentration well balanced by a pleasant acidity. Grape variety and production area It is produced with grapes from the Granaccia vine harvested in the vineyards of Ortovero and Onzo. Training system Spurred cordon. Total acidity Min 5 g/l Dynamic maceration of the destemmed grapes with natural production of carbon dioxide for around 7 days from the start of fermentation. Fermentation at slightly controlled temperature. Exploitation of fermentation gases upon tank saturation. Permanence in batonnage on the fine lees for a few months. Natural clarification by decantation and controlled temperature storage in steel. No addition of sulfur dioxide or chemical products during clarification or bottling. A small deposit is to be considered completely natural. Food matches Cold cuts and cheeses are preferred, in particular Brigasca sheep toma, red meats and game, wild boar, roast porchetta. How to serve it and keep it It is served in a large goblet with a medium-wide mouth, at a temperature of 18 °C. It must be kept lying down in the red wine compartments of the cellar, at a constant temperature between 11 and 14°C.
