Total 6.10 g/L; pH 3.30; SO2 total 58 mg/L Formats: 0.75 L Burgundy bottle Vinification: Produced from thinned out grapes to increase the quality of the wine right from the start, during the harvest only the perfectly ripe bunches are selected and de-stemmed with the aim of not breaking the berries too much. The maceration on the skins lasts at least 15 days during which delicate pumping over and punching down are carried out. The racked wine passes into used barriques where the malolactic fermentation takes place. The aging in barriques lasts 12 months and only then is the wine bottled.Tasting: Purplish red colour. On the nose, spicy notes of vanilla and cocoa combine with the prevailing notes of red fruit. The mouth is full-bodied with an intense structure and evident tannins. The finish is complex and persistent.
