Vinification
Selective manual harvesting in crates, very delicate destemming to leave the berries completely intact, maceration and fermentation in steel at a controlled temperature for about 20 days with periodic submersion of the cap, 2 pumping over a day with separation of the grape seeds, repeated delestage, soft pressing.
After malolactic fermentation, aging in French oak barriques-tonneaux for about 24 months and at least 6 months in the bottle.
