Unlike the red label Syrah, the Don Pietro Rosso “Dei Principi di Spadafora” is a structured organic wine with the typical elegance of a Sicilian Bordeaux blend, therefore Nero d'Avola, Cabernet Sauvignon and Merlot. Taste: harmonious, round, persistent, well-present tannins, therefore it shows an intense ruby red color and nuances of garnet red, not very transparent, the company produces 45,000 bottles. Don Pietro is the first bottle produced by the Spadafora Company, we are talking about 1993, even if the first test dates back to 1991. Starting to produce a wine with so many personal implications could also have been a reason for insomnia but it was not like that, indeed I honestly have to tell you that even today, when I go around following the market and find a bottle lying around, my heart aches. The vinification of the Don Pietro Rosso grapes takes place in different periods, the first grape to be vinified is Merlot, then Nero d'Avola and finally Cabernet Sauvignon. The part that I find most interesting is the moment of blending, that is when I have to decide the percentages of each one, which obviously depend on the interpretation of the vintage.
