Wine of great structure, good harmony and long persistence. It has a deep ruby red color with garnet reflections, intense fruity aromas of currants and blackberries, supported by a note of vanilla. The dry, pleasantly acidic, highly sapid flavor goes well with cured meats, roasted and boiled red meats, well-aged cheeses.
TECHNICAL DESCRIPTION Vineyard exposure: east, south and west. Soil composition: soils rich in sand and calcareous clays. Vine density: about 4900 vines per hectare. Type of training: Gouyot. Harvest: end of September. Vinification: once the grapes arrive in the cellar they are destemmed, pressed and fermented for a week, at one temperature of 25-30° C. Racked off and, with some decanting, decanted, the wine is left in the tank until the following summer, having finished also malolactic fermentation. Bottled, it is left to refine 6 months in the bottle. ORGANOLEPTIC CARD Denomination: Barbera d'Alba DOC Grape variety: Barbera Colour: bright and intense ruby red. Bouquet: vinous and fruity. Taste: enveloping, slightly acidic, well structured. Gastronomic combinations: it goes very well with non too elaborate (appetizers and first courses), with roast meat, game and aged cheeses.
