Bears a woman's name (Elena) this ruby red wine with garnet reflections that ages in the cellar before bottling. It offers sensations of ripe fruit to the nose and a long, slightly vanilla-flavoured aromatic persistence. In the mouth it is dry, fruity, pleasantly acidic, full-bodied and harmonious. It goes well with roasts and stewed meats, cooked cured meats, game stews.
TECHNICAL DESCRIPTION Vineyard exposure: south. Soil composition: soils rich in sand and calcareous clays. Vine density: about 5900 vines per hectare. Type of training: Gouyot. Harvest: end of September. Vinification: the grapes arrived in the cellar were destemmed and pressed and put into fermentation for a week, at a temperature of 25-30° C. Drained and decanted with some decanting, it is placed in barriques for about 15 months. Bottled and left to age for 6 months in the bottle. ORGANOLEPTIC CARD Denomination: Barbera d'Alba DOC Grape variety: Barbera Colour: bright and intense ruby red. Bouquet: vinous and fruity. Taste: in the mouth it is enveloping, slightly acidic, well structured. Gastronomic combinations: it goes very well with not too much dishes elaborated (appetizers and first courses), with roasted meat, game and aged cheeses.
