The Recioto Della Valpolicella of the Nicolis family is created with traditional techniques that transform the ripe grapes of Corvina, Rondinella and Molinara into a rich and complex wine. The high quality grapes are carefully selected and left to dry over the winter, concentrating the sugar content and flavor compounds. The dried grapes are then fermented to an acceptable alcohol level, leaving a high sugar content in the finished wine.
Withering: 4 months in the fruit cellar. Fermentation: spontaneous, with native yeasts, in tanks of steel for 18 days in late winter, interrupted at achievement of the alcohol and sugar content desired. Maturation: 6 months in Slavonian oak barrels. Bottle refinement: 2 months. VINIFICATION Food: excellent dessert wine, perfect with pandoro, panettone, shortcrust pastry or soft and tasty cheeses.
