LAND: Hillside with South-West exposure, Di
colluvial origin. Composed of marl in depth and sandy
clayey from hilly runoff on the surface.
This lower median hilly area is always very windy,
maintaining a dry and cool environment, which allows
slower maturation but able to give freshness and nerve to
this Refosco.
HARVEST: Manual, the harvest period is evaluated
visually to the achievement of the optimal maturation of the
grapes, with tasting of the grape seeds, coloring of the brush,
transfer of color by rubbing the peel.
VINIFICATION: The grapes are destemmed and placed
immediately into the vats for fermentation, it is then
left to macerate with the skins, until the spontaneous departure
indigenous fermentation. During fermentation they are carried out
manual punching down daily, until the natural conclusion of the
fermentation. The squeezing is with a traditional, modified press
to work at low pressure. After a static settling of
24 hours, it is sent still cloudy inside oak barrels
from 300 liters for 24 months of refinement.
The refinement then proceeds in concrete barrels for a further 6 months.
Bottling usually takes place during the last quarter of
moon after Easter.
AGING IN THE BOTTLE: 12 months, usually
entry into the market coincides with Easter of the following year
to that of bottling
CHARACTERISTICS OF THE WINE:
Its color is deep purple red, with violet reflections.
On the nose, wild blackberry, ripe cherry, licorice, chocolate.
On the palate it is full, ample, mineral and saline, with an acidic note
fresh, of great olfactory taste correspondence, on the finish un
ample tannins and sweet wine of very long persistence.
A wine of great gastronomic versatility, it marries beautifully
with all meats, but reaches its maximum in combination with
game
