Harvest: manual, to preserve the integrity of the peel, in crates, during the first fortnight of October
Vinification: soft pressing of the grapes, fermentation in stainless steel tanks with temperature control, frequency of pumping over and oxygen supply to optimize polyphenolic extraction. This is followed by malolactic fermentation
Aging: at least 3 years in medium-capacity Allier French oak barrels and large Slovenian oak barrels
Refinement: at least 6 months in the bottle
