Zenta rosso represents the embodiment of our commitment to quality, excellence and the constant search for harmony between nature and the art of winemaking. Every single bottle of this wine is the result of a careful process, which starts from the scrupulous selection of the best Merlot and Cabernet Sauvignon grapes (50% and 50%) from our most suitable vineyards.
Named after the Battle of Zenta in 1697 which definitively extinguished the expansionist aims of the Ottoman Empire over Europe, this wine is produced from the best bunches of Merlot and Cabernet Sauvignon for the same percentage. The single parcels are vinified separately and undergo a long maceration at low temperature. To protect the cap from the action of bacteria, during the maceration phase the grapes are continuously wet with the must; once the alcoholic maceration is over, a first phase of decantation takes place to separate the solid part of the grape from the yeasts which will be used for the aging on the lees and for the malolactic fermentation. The final phase of refinement requires a 16-month stop in barriques; the individual batches are then assembled for a short time in steel.
