Exclusively by hand in small 15 kg boxes. The cold maceration on the skins for 3 days allows the correct extraction of the tannins, sweet and delicate, and of the colour. After malolactic fermentation, the wine is partly aged in French oak barrels for 8 months before delicate filtration and bottling.
