The grapes are harvested by hand; after destemming and crushing, they are fermented in stainless steel tanks with pistons that automatically punch down.
Fermentation temperature of 22-24°C to preserve the fruity aromas.
After 12 days the racking takes place, then the malolactic fermentation (100%). Aging in French oak barrels for 8 months.
