The grapes come from three different vineyards, mainly from the Titon area, which is characterized by a cool climate. The yield per hectare is extremely low. The traditional vinification for Syrah is used. Maceration and fermentation take place at a controlled temperature of 22-23°C, then malolactic fermentation. Aging in French wood of 225 lt. (60%) for 6/8 months.
