The grapes are harvested by hand in small 15 kg baskets and are then carefully selected on a table in front of the destemmer. After 3-4 days of cold maturation on the skins, fermentation takes place in stainless steel tanks at a temperature of 22-23°C with selected yeasts. After the malolactic fermentation the wine is partially aged in French oak barriques for 6 months. In wine it is not filtered in order to preserve all the aromas and minerals of the soil.
