Croatina Il Soffio Provincia di Pavia IGT Ferma 2022 – Alessio Brandolini

Vineyards "Il Soffio" is produced in the municipalities of San Damiano al Colle and Rovescala. The vineyards are located on hills exposed to the sun at a height between 250 and 300 slm . Vinification The grapes are harvested when they have reached an adequate polyphenolic ripeness. After a careful selection of the bunches, the must is fermented for several days in contact with the skins. Sensory characteristics The aromas of small red fruits emerge on the nose: strawberries, blackberries, blueberries, currants. The wine has good acidity and tannins, it is definitely a full-bodied wine. Pairings Cured meats, elaborate first courses and second courses based on red meat. Service temperature: 18°.
