Pino Nero is a red wine obtained from red grapes, fermented with semi-carbonic maceration. Spontaneous fermentation. Aging in fiberglass tanks. Without sulphites added before bottling. The result is a wine that gives the palate a great sensation of freshness and many fruit flavors. LOCATION: Contrada Vagnola, Villa Celiera (PE) GRAPE VARIETY: 100% Pinot Noir (50% Burgundy clone and 50% Alsace clone) VINIFICATION: semi-carbonic, whole bunches poured into concrete tanks, the first half was pressed with the feet, the second filled with whole bunches, hermetically sealed for a week. Once pressed, they completed fermentation and refinement in amphora. FERMENTATION: spontaneous in whole bunch semi-carbonic maceration for seven days. REFINEMENT: in amphora, no addition of sulphites, filtration or clarification. PAIRING: excellent for meat-based dishes, mixed cold cuts, fresh and mature cheeses. SERVE AT: 16 – 18 °C FORMAT: 0.75 l
