Mainly trained in Guyot, the vines of our Merlot benefit from soils composed of marl and sandstone of Eocene origin. The 2017 harvest took place during the second half of September. The healthy and perfectly ripe grapes are harvested by hand, in small boxes, to preserve the integrity of the berry. Delicately destemmed, it is then subjected to pressing. Fermentation follows with maceration of the skins at a controlled temperature, in stainless steel containers. The maturation takes place in steel and small French oak barrels. Once bottled, the wine then rests in temperature-controlled rooms for refinement.
