Syrah is a noble Mediterranean grape that gives its best in bright and dry places like our Sicily. This is why we strongly believe in the future of this variety in our land. From an extraordinary vineyard - Maroccoli at about 400 meters, in an uncontaminated place - this interpretation of Syrah is born in a modern key and respectful of the characteristics of the grape. Imposing and impenetrable, it is a wine destined for long aging.
VINEYARD: Maroccoli. VARIETY: Syrah. TYPE OF SOIL: soil rich in skeleton, medium clay with an abundant silty fraction. ALTITUDE: 370 meters above sea level YIELD PER HECTARE: 90 quintals. TRAINING SYSTEM: spurred cordon. PLANT DENSITY: 4,500 plants per hectare. HARVEST PERIOD: 10-15 September. VINIFICATION: destemming followed by 21 days of permanence on the skins at 25 ° C after racking, followed by malolactic fermentation in steel and wood aging for 14 months in barriques. AGING: in Allier oak barriques, 30% new. BOTTLING PERIOD: first half of March. ALCOHOL CONTENT: 14.5% vol. TOTAL ACIDITY: 5.65 g / l. PH: 3.58 AGING CAPACITY: to drink immediately or age up to 7/10 years. BOTTLE SIZE: 0.75 l, 1.5 l, 3 l, 5 l, 9 l, 12 l ORGANOLEPTIC NOTES: Sweet oriental spices and a slight hint of roasted cocoa accompany the wine in all the tasting phases, now opening a space with clear and sunny black fruit, now with more winter notes of leather and humus. Enveloping Tocco that recalls the texture of velvet with a finish of mint and black pepper. PAIRING: Marinated and grilled lamb chops, accompanied with mint or even with an orthodox parmigiana with smoked provola.
