Production area: Salento, Puglia. Grapes and Vinification: Primitivo di Manduria Dolce. Malolactic fermentation and aging in first and second passage American and French oak barrels for about 6 months. Color and Pairing: Red, excellent with aged pecorino and dry pastries.
Grapes: Primitivo 100% Color: Red Capacity: 0.50 Production Area: Salento, Puglia. Vinification: manual and late harvest of the grapes (early October) following withering on the vine. Destemming-crushing maceration at controlled temperature for 10-12 days with periodic pumping over, racking, malolactic fermentation and aging in first and second passage American and French oak barrels for about 6 months. Sensory characteristics: impenetrable ruby red color with garnet reflections intense and complex bouquet, with hints of very ripe red fruits, cherry and black cherry jam, dried figs, light notes of cinnamon and vanilla. On the palate it is full and enveloping, with an excellent balance between sweetness and acidity and a remarkable persistence.
