Description

TYPE Passito Rosso IGT TYPE OF WINE Red ALCOHOL CONTENT 14% VOL VARIETY Montepulciano d'Abruzzo 100% VINEYARD OF ORIGIN Tenuta del Cerano (340 m asl) Valle Peligna, Vittorito TYPE OF SOIL Medium mixture tending to clayey TRAINING SYSTEM Espalier cordon spurred YIELD PER HECTARE 70 quintals / ha, short pruning HARVEST PERIOD Rigorously manual harvesting during the first ten days of November with initial drying of the grapes on the plant. Scrupulous selection of the best bunches and drying of the grapes on racks for about two months in a ventilated and dehumidified environment with a weight loss of about 50%. VINIFICATION At the end of January following the year of harvest, the concentrated grapes undergo a processing process which, given the small quantities of processed product, is very similar to that of the past. Once the destemming has taken place, the traditional fermentation in red at a controlled temperature is started which, given the high sugar content of the same, has a duration of about 20/30 days. It follows the drawing off and subsequent pressing with a manual press. Refinement in steel. ORGANOLEPTIC CHARACTERISTICS Meditation wine with an intense ruby red color, with important aromas of ripe fruit such as black cherry, plum and jam. The taste is harmonious, complex, of long persistence, with a full, structured, rightly sweet flavor. It goes well with cheeses with a strong flavor and, at the end of a meal, with dry pastries and pies. Excellent with dark chocolate. Ideal for lovers of "sweet - not - sweet". LONGEVITY IN BOTTLE 5 - 8 years SERVING TEMPERATURE 18 ° AVERAGE ANNUAL PRODUCTION 1500 bottles of 500 ml NOMINAL VOLUME 500 ml
