Roccosecco is the wine of memories, the term of which derives from the nickname of the great-grandfather of Franco D'Eusanio, founder of Chiusa Grande . Montepulciano ruby red with hints of vanilla, red fruits and jams. It is the sublime result of the work of five generations in the service of the vine. Its balanced and harmonious character, the result of a perfect balance between alcohol and tannins, evokes the sense of tradition.

HARVEST
Harvesting takes place in the second and third week of October when the grapes reach full biological ripeness, evaluated by measuring the sugar content, pH, total acidity and polyphenolic potential. The grapes are harvested manually to respect their integrity and the organoleptic characteristics that will be expressed in the future wine
VINIFICATION
The vinification takes place respecting the tradition which, after the selection of the best grapes, involves the de-stemming and contact of the skins with the must for about 25-30 days at a controlled temperature of 28-30 ° C. During this period of contact of the must with the skins, periodic pumping over and delestage are carried out which allow the fractional extraction of the noble components of the skins that will characterize the taste of the future wine. At the end of this extraction phase, the wine obtained is separated from the skins with soft pressing and stored in steel tanks for the subsequent malolactic fermentation. Subsequently the wine is decanted into oak barrels where it rests and refines for 12 months until bottling. It is released for consumption after 3 months of bottle aging. In all stages of winemaking, the rules laid down by the regulations for the production of organic wines are respected in order to guarantee and protect the genuineness and wholesomeness of the product.

Ruby red with slightly garnet reflections
SCENT
Wide, intense and persistent, pleasantly spicy and slightly fruity with flavors of ripe red fruits and jam. The harmony and balance between the aromatic components give this wine a bouquet typical of the area of origin
TASTE
The good alcohol content, low acidity and soft tannins mean that this wine is endowed with a remarkable personality and typicality and presents a harmonious and ample taste with excellent body and marked persistence
PAIRINGS
Due to its organoleptic characteristics it goes well with dishes based on red meats, game and aged cheeses typical of the land of origin
