COMPOSITION OF THE SOIL: Of glacial origin: gravelly moraine with the presence of limestone and clay with an airy and permeable substrate.
VINES: 100% Merlot
AVERAGE AGE OF VINES: More than 20 years
HARVEST: Made by hand, in crates, between the last week of September and the first of October.
VINIFICATION: The talent of a wine that comes from the respect and accuracy of a procedure. The grapes placed directly in small boxes are left to rest briefly before vinification. After crushing and destemming, the must is left to macerate for the extraction of color and polyphenolic substances.
AGING: After decanting, the wine is left in tonneau followed by a period in the bottle, which is essential for maturation.
