TYPE OF SOIL: Calcareous with the presence of clay. TRAINING SYSTEM: Spurred cordon. HARVEST: After 20 October with manual harvesting and selection of the bunches. YIELD PER HECTARE: 90 q of grapes. VINIFICATION: Fermentation and maceration for 21 days in stainless steel thermo-conditioned vinificators, managed with at least 2 deléstage in the middle. BOTTLING: 36 months after the harvest. COLOR: Intense ruby red. CHARACTERISTICS: It manifests its aromas with considerable complexity. The nose is intriguing and enveloping. The taste opens with sensations of undergrowth fruits and licorice rightly balanced with pleasant tannins. ALCOHOL CONTENT: 14.5% vol. PAIRING: Turkey with chestnuts, ducks with truffles, wild boar in a pan.
