VINIFICATION Harvest in the second ten days of September. Choice of bunches on the plant and manual harvesting in boxes. Destemming and maceration in contact with the skins at a controlled temperature of 28 ° C for about 30 days. Fermentation takes place at a controlled temperature of 26-28 ° C with constant pumping over and punching down; malolactic fermentation in oak barrels.

NOTES Syrah Sole di Sesta is the expression of one of the international vines which in Sicily has found its perfect location and ability to reveal its best characteristics. Syrah is described on the label by an extract from the poem «Poscia ch'Amor del tutto left of me», taken from Dante Alighieri's Le Rime. This short extract describes the Sun (also taken from the name of the wine) and its slow but wise action that inevitably allows the grapes to exploit the energy and give us wine jewels.The Sole di Sesta Syrah di Cottanera sees its vineyards rooting in lava soils in the Cottanera and Feudo di Mezzo districts.
AGING The wine ages 14-16 months in medium and high toasted French oak barriques (60% new). With subsequent 18 months of bottle aging.
