Impetus and Fascination.
A pure, harmonious force, free from conditioning, sometimes a fascinating crater, sometimes an impetuous eruption. A Montepulciano Doc absolutely sulphite-free, revolutionary, with violet hues, hints of wild berries and sour cherries.
Harvesting takes place in the second and third week of October when the grapes reach full biological ripeness as assessed by measuring the sugar content, pH, total acidity and polyphenolic potential. The grapes are harvested manually, respecting their integrity and the organoleptic characteristics that will be expressed in the future wine.
Vinification takes place according to tradition, which, after selecting the best grapes, involves destemming and contact of the skins with the must for about 15 days at a controlled temperature of 18-20°C, after a cold pre-maceration at 8°C for 5 days, to obtain a must that is richer in the noble components of the skins, particularly aromatic ones, typical of the grapes of origin. During the period of contact of the must with the skins, periodic pumping-over and delestages are carried out, allowing the skins to be completely mixed with the must so as to have a fractioned and optimal extraction of all components. Once the alcoholic fermentation and extraction phase is complete, the wine obtained is separated from the skins by soft pressing and racked into steel tanks for subsequent malolactic fermentation. After subsequent racking to allow natural stability and clarification, the wine is bottled and aged in the bottle for about three months before being released for consumption. At all stages of vinification, in order to guarantee and protect the genuineness and wholesomeness of the product, the rules laid down in the regulations for the production of organic wines without the addition of sulphites are respected
