VINIFICATION Manual selection of the grapes. Drying for about 3 weeks in the drying room under optimal temperature, humidity and ventilation conditions. Crushing with crusher-destemmer. Maceration in stainless steel tanks at a controlled temperature of 20 -24 degrees for a period of 10 days with alternating daily pumping over and délestage. Transfer to vitrified concrete tanks for the completion of the alcoholic and malolactic fermentation.

TASTE A pleasant spiciness is perceived. The palate is firm and solid, soft and elegant, dry and velvety.
NOTES Without a shadow of a doubt this wine is certainly one of the most important Valpolicella Superiori. The grapes with which it is made are harvested in the vineyard of Monte Sant'Urbano, which gives its name to the wine itself. It is vinified after the grapes have dried in the drying room for 20-25 days.
AGING 24 months in 500 l French oak barrels. Refining in bottle for 6 months.
