TYPE OF SOIL The soil is formed by a high percentage of clay and, characteristic of this higher area, by a rich presence of stones.

VINIFICATION After harvesting and manual sorting, the grapes in the cellar are crushed and de-stemmed, the maceration of the skins is carried out in steel tanks and usually lasts between 8 and 10 days with several daily pumping over. Normally malolactic fermentation is favored. In the first winter months, the wine is decanted into second, third and fourth passage French oak barriques with light toasting where it ages from 12 to 18 months depending on the vintage. After the assembly, the wine is bottled, then the wine rests for a few months in the bottle before being put on sale.
COLOR Deep ruby red.
BOUQUET the perfume is of elegant intensity and has evident fruity notes (cherry jam, blackberry) and spicy black pepper with hints of leather and chocolate.
PAIRINGS Being a complex wine with medium tannins, it goes well with a simple fillet of red meat, cheeses or as a meditation wine.
TASTE The taste is soft, warm, with velvety and enveloping tannins. The finish is sweet and persistent, enveloping and with a very clean and very fine finish. It can mature for over 5 years from the harvest, developing aromas of ripe red fruit, tobacco and a velvety and persistent taste, always very elegant.
NOTES Madér is the dialect name of the vine shoot from which the grapes bear fruit. Produced from the traditional blend consisting of Groppello, Sangiovese, Barbera and Marzemino hand-picked from the oldest vines.
