WINEMAKINGAfter manual harvesting and sorting, the grapes are crushed and destemmed in the cellar, maceration of the skins takes place in steel tanks and usually lasts between 8 and 10 days with several daily pumpings over.malolactic fermentation is normally favoured. In the early winter months, the wine is racked into lightly toasted second, third and fourth passage French oak barriques where it is aged for 12 to 18 months depending on the vintage. After blending, the wine is bottled and then rests for a few months in the bottle before being put on sale.
COLOURDeep ruby red.
PERFUMEthe bouquet is of elegant intensity and has clear fruity notes (cherry jam, blackberry) and spicy notes of black pepper with hints of leather and chocolate.
PAIRINGSBeing a complex and medium tannic wine, it goes well with a simple red meat fillet, with cheese or as a meditation wine.
TASTEThe taste is soft, warm, with a velvety and enveloping tannicity. The finish is sweet and persistent, enveloping and with a very clean and fine finish. It can mature for over 5 years from the harvest, developing aromas of ripe red fruit, tobacco and a velvety and persistent taste, always very elegant.
NOTESMadér is the dialect name for the vine shoot from which the grapes bear fruit. Produced from the traditional blend of Groppello, Sangiovese, Barbera and Marzemino hand-picked from the oldest vines.
