VINIFICATION Harvest at the end of September. Destemmer pressing, followed by maceration and fermentation for about 7 days in vertical steel vats. Controlled and completely carried out malolactic conversion, followed by aging in steel and cement tanks (of which 20% in wood) for a period of 12 months. More bottlings are made starting 15 months after the harvest
