TYPE Brunello di Montalcino DOCG
PRODUCTION AREA Castelnuovo dell'Abate Montalcino (Siena)
VARIETY Sangiovese Grosso 100%
TYPE OF SOIL The composition of the soil is of a medium-textured marl of Eocene origin.
VINIFICATION In stainless steel containers and vitrified cement tanks at a controlled temperature by means of cooling jackets and immersion plates.
TRAINING SYSTEM Spurred cordon.
COLOR Ruby red tending to garnet.
BOUQUET Notes of red berry fruit are wrapped in a slight spiciness.
PAIRINGS It goes well with refined main courses based on red meats or game. Excellent with aged cheeses, excellent with a crusted venison fillet and with hare in red wine.
TASTE The taste is warm, quite soft and very balanced. Full-bodied wine with moderately pronounced tannins and long taste-olfactory persistence.
NOTES It is a wonderful Brunello but, probably, drinking it today would almost mean committing infanticide. Its peculiar current characteristics tell us that it will last for many years in the cellar. The problem is how long you will be able to resist without uncorking it.
AGING In Slavonian oak barrels from 20 to 75 hl over 2 years, followed by aging in the bottle for more than 8 months.
