VARIETY 80% Nerello Mascalese, 20% Petit Verdot
TYPE OF SOIL Volcanic rich in skeleton. Dark soil born from the disintegration of ancient lava flows coming from the volcano.
AGE OF VINES 25 years
VINIFICATION 60% yield in must, fermentation with maceration of the skins by pumping over and delestage for at least 20 days.
TRAINING SYSTEM Etna bush and spurred cordon.
COLOR Intense ruby red color with violet reflections.
BOUQUET Hints of ripe fruit, tending to balsamic with lava notes.
PAIRINGS Excellent with red meats, better if well seasoned. It also goes perfectly with well-aged hard cheeses, game and lamb.
TASTE Savory, dynamic with a long and constant structure.
NOTES The great elegance of Nerello Mascalese blends perfectly with the character of Petit Verdot, an exciting combination.
AGING 6 months in steel with spontaneous malolactic fermentation, passage in tonneaux for 12 months and subsequent refinement in the bottle for 12 months.
