PRODUCTION AREA Vineyards with south-east, south-west and north-west exposure in the municipalities of Nus, Fenis, Chambave, Verrayes, Saint-Denis, Pontey at 450-680 meters above sea level.
VARIETY Pinot Noir 100%
TYPE OF SOIL Soils of morainic origin, mainly composed of sand (80%) and, for the remainder, of silt. The clay content is minimal (at most 10%). In fact, these are sub-alkaline soils rich in skeleton, usually not very deep.
VINIFICATION Cold pre-fermentation maceration for 24 hours. Fermentation in steel at 23 ° C, for 10 days with frequent pumping over.
TRAINING SYSTEM Guyot, sapling, spurred cordon.
COLOR Ruby red color, brilliant
BOUQUET Intense and persistent, fruity and floral aromas. You can recognize red, purple and dog rose fruits.
PAIRING Local cold cuts, soups and local stewed meat recipes.
TASTE In the mouth the wine is balanced, with soft and never invasive tannins. Alcoholicity acts as an amalgam between the phenolic component and the acid structure, giving us a wine with an excellent balance.
NOTES Coming from Burgundy, where it gives away some of the greatest wines in the world, Pinot Noir has always given pleasant surprises even in Valle d'Aosta. In fact, despite its delicacy, in these areas it manages to reach perfect ripeness thanks to the particular exposure to the south and the low altitude of the vineyards.
