From an idea of Dario and his collaborator friend Cesare, who passed away prematurely, the sparkling rosé from Corvina grapes, of second flowering, was born to bring out the freshness and youth of the fruit. The name Ghes, a Greek word meaning “of the earth”, indicates the deep bond of the wine with the soil that generates it.

Vineyard
Clayey and calcareous soil, average altitude 350 - 500 meters above sea level. Southern exposure, ideal microclimate to enhance fresh and elegant aromas.

Per hectare 40-50 hectoliters (1-1.5 kg of grapes per plant).
Training system
Guyot, with a density of 5800 plants per hectare.
Defense method
Certified organic viticulture.

Method of collection
Careful selection of bunches of corvina, with variable percentage of second flowering grapes.
Winemaking technique
Pressing with destemming of the grapes, cold maceration, fermentation at low temperatures and maturation in steel containers, fermentation in autoclave.

Color: Deep pink with purple reflections, brilliant - Bouquet: fresh, delicate with hints of strawberry, raspberry and dog rose - Taste: dry, dry and savory - Alcohol content: 11.5 ° -12 ° - Acidity: 6.0- 7.0 ‰ - sugars: 14-18 g / l.

Ideal as an aperitif and on raw dishes, exciting with shrimp and vegetable timbale, snacks with courgette flowers, pear boats with mascarpone cream, rice with prawns, cod fillets in batter. Intriguing with sushi and sashimi dishes.
