Harvest: By hand, in crates. Vinification: The bunches of Troia grapes are rigorously collected by hand, in boxes. After a few hours of pressing destemming, the must is separated from the skins and placed in stainless steel tanks. There the fermentation process begins at 18-20° C for 10-12 days.
