This sparkling wine is obtained from the vinification of Barbera and Dolcetto grapes with the "salasso" technique, i.e. through a very soft pressing of the bunches which give the wine a "rosé" colour. Fermentation takes place with the Martinotti method in an autoclave. It is a Spumante Brut particularly suitable with all Mediterranean cuisine and white meats.
