Grapes Selection of red berried grapes Production area In the heart of the province of Chieti, between the Maiella National Park and the Adriatic Sea. Hilly soils, with an average altitude of 230 meters slm , mainly clayey-limestone. Vinification and aging Soft pressing after short cold pre-fermentation maceration and low temperature fermentation in stainless steel tanks, 16-18°C. Aging on the fine lees without bàtonnage for about 4-5 months before bottling. Organoleptic characteristics Intense pink color with soft purplish hues that evolve towards salmon during the refinement in the bottle. Ample and elegant aromas with notes of cherry, raspberry and wild strawberry which are combined with fine floral notes and aromatic herbs. On the palate it is structured but well balanced by the acidic freshness. Long persistence, with a pleasant and gastronomic phenolic grip. Food pairings Cold cuts, pizza, white and red meats, grilled vegetables, fish soup, tripe, fresh cheeses. Alcohol content 14% alcivol.
