TYPE OF SOIL The soil is formed by a high percentage of clay and, characteristic of this higher area, by a rich presence of stones.
AGE OF VINES 18 years.
VINIFICATION The blend consists of Groppello, Barbera, Sangiovese and Marzemino. The grapes of the different varieties are harvested manually from the Borgo San Donino vineyard; in the cellar they are crushed and de-stemmed. The maceration of the skins usually lasts only a few hours until the desired coloring intensity of the must is obtained, then the racking is carried out. Alcoholic fermentation is carried out at a low temperature, as soon as the wine is finished it is cooled to prevent malolactic fermentation, the clear wine is then refined in steel tanks until January.
COLOR Lively pale pink color.
BOUQUET Sweet scent reminiscent of red forest fruit and a certain vinosity reminiscent of cherries.
PAIRINGS It is a very versatile wine that lends itself to numerous combinations of Garda cuisine: from salami to fish also cooked on the grill or in the oven with herbs and vegetables.
TASTE The taste is salty and very fresh, with a soft and fragrant finish.
NOTES Chiaretto, produced according to ancient tradition from the vinification of the blend of Marzemino, Groppello, Sangiovese and Barbera, has a peculiar pale pastel pink color. Wine with fresh aromas of small red fruit, pink grapefruit, mineral with a slight aging, of great elegance and finesse.
