VARIETY Aleatico 100%
TYPE OF SOIL Of volcanic origin (metamorphic granite) with a considerable mineral endowment.
VINIFICATION After the harvest, when fully ripe, the Aleatico grapes are crushed and subsequently undergo a soft pressing; the must is fermented at a controlled temperature of 15-18 degrees C.
COLOR The color of this Rosé is close to Tea Rose.
BOUQUET It is very fresh with the typical scents of the aleatico, such as dog rose, violet, cherry, but at the same time rich in the aromatic bouquet typical of the Mediterranean scrub.
PAIRINGS Excellent as an aperitif, it is ideal to be paired with a nice plate of raw seafood.
TASTE Fresh, aromatic and fruity in the mouth, delicately balanced and with a long persistence.
NOTES The grapes for the production of Rosato delle Ripalte come from the Poggio Turco vineyards cultivated in Aleatico. It is a new interpretation of an old vine, grown on the high terraces overlooking the sea of the southernmost tip of the island. The aromas are those of wild rose with a hint of Mediterranean scrub; the structure, on the contrary, is light but does not deprive us of a long and complex tasting.
