TYPE OF SOIL Sandy-silty with acid reaction
VINIFICATION The first operation is the immediate reduction of the temperature of the grapes with dry ice. The whole grapes are then left to macerate in a cold press for a few hours. The result of the pressing is a pale pink free-run must, which is fermented at a low temperature for a few weeks in the absence of skins. This will be the sparkling base. The rest of the process faithfully traces the phases of the classic method

NOTES The Spumante Metodo Classico Brut Rosè, which owes its pink color to the cold maceration of the Nebbiolo grapes, and subsequent pressing, is a truly particular and original product: it is really rare to find a sparkling wine based on Nebbiolo and, above all, with these quality features. Its processing requires that the base wine remain for a few months in steel to mature and then be bottled with the yeasts, for refermentation, then aged for at least 36 months.
AGING After the tirage, it rests on its own yeasts for at least 36 before disgorgement.
