Yield per hectare: 180 quintals. Harvest period: Glera beginning of September, Verduzzo mid-September. Province of Origin: Venice. Soil type: Calcareous clay of alluvial origin. Altitude: 11 sldm Vineyard exposure: North - South. Harvest: Mechanical. Vinification: The grapes are vinified in white. The crushing is followed by a soft pressing. The assembly with the percentages indicated above takes place just before the final prize de mousse. Primary fermentation: at controlled temperature (15 - 16°C) with selected yeasts for 20-25 days. Malolactic fermentation not carried out. Secondary fermentation: Martinotti method at controlled temperature (15 - 16°C) with selected yeasts for 20-25 days. Refinement in autoclave: In bottle for at least 1 month. Refinement: In the bottle for at least 1 month. Sugar residue: 16/17 g/l. Appearance: Pale straw yellow with reflections tending towards platinum, with a fine and persistent perlage. Olfactory test: Simple, fresh and immediate nose, floral notes of lily of the valley can be recognized followed by fruity hints of apple, pear and citrus. In the finish there are vegetal tones reminiscent of lemon leaves. Gustatory examination: The taste confirms the simplicity and has as its main characteristic a nice acidic verve which however is well integrated into the rest of the structure and therefore leaves room for retro-nasal perceptions which are able to retrace the path traced by the direct route. Pairing: Excellent as an aperitif, to try on small boats of Belgian endive with crescenza flavored with chives, excellent with canapés with salmon and mascarpone cream, sublime with vegetable vol.au-vent. Serving temperature: 04°C- 06°C. Alcohol content: 11.5% vol.
