Sensory Fresh red fruit. Long, complex, full-bodied. Fine, persistent perlage.
Vinification Pressing of the Chardonnay grapes, racking off the skins, must transferred to the vinificator at 10°C. After 10-12 days, same process for Pecorino grapes, transferred in the same quantity to the same vat. Complete malolactic fermentation in tonneaux with bâtonnage for 6 months. Followed by 12 months in the bottle.
