Harvest: manual, only of perfectly ripe healthy bunches collected in small perforated crates
Vinification: soft pressing with very low yields
Fermentation: with selected yeasts at a controlled temperature of 16-18C in cement tanks
Aging: minimum 24 months on the lees in the bottle
Disgorgement: at least 3 months before marketing
TASTING NOTES
It has a deep straw yellow color with golden reflections. On the nose, it has delicate notes of yeast and baked bread, combined with a very elegant fruitiness (Golden Apple and Banana), enveloping and complex. The taste is balanced, of medium persistence, with a pleasant bitter aftertaste, rightly sour.
