This is followed by a soft and delicate pressing with fermentation in steel at a controlled temperature. The sparkling base is aged on the lees for 6 months. While the aging on the lees lasts another 18 - 24 months in the bottle. Beautiful bright and luminous straw yellow colour. Fine and persistent perlage. On the nose it has floral hints of white flowers which complement the hints of bread crust. On the palate it is very complex and balanced with good acidity and bubbles that make it drinkable.

Denomination: Franciacorta DOCG Grape variety: Chardonnay 80%, Pinot noir 20% Yield per hectare: 90 quintals/ha Total sugars at disgorgement: 4 g/L Analytical data: Alcohol 12.5%; B.C. Total 6.8 g/L; pH 3.10; SO2 tot 69 mg/l Formats: Standard bottle in transparent glass of 0.75 L Vinification: After a careful selection of the grapes we proceed with a soft pressing and a fermentation in steel at a controlled temperature. The sparkling base is aged on the fine lees for 6 months with weekly battonages. The aging on the lees in the bottle lasts for a period ranging from 18 months to 24 months after which, with a careful manual remouage, the residual yeasts are brought to the tip for the last disgorgement operation. Tasting: Straw yellow color with fine and persistent perlage. Delicate olfactory notes of white flowers which are completed with hints of bread crust and pastry. In the mouth it is complex and balanced, with good acidity and long taste-olfactory persistence.
