Vinification: in white, with crushing and soft pressing of the grapes. The wine undergoes a second fermentation at a controlled temperature in an autoclave with selected yeasts. Second fermentation lasts about 10/15 days. Colour: pale yellow, fine and persistent grain. Smell: intense, balsamic fragrances of sage and thyme marry with floral nuances of broom and acacia. Taste: fresh and full, with excellent minerality and rich acid structure. The liveliness and fragrance enhance its persistence
