COLOR pale straw BOUQUET decisive, intense, slightly yeasty, almond and hazelnut SUGGESTED PAIRINGS Excellent throughout the meal, it goes well with dishes based on fish or shellfish. Also goes well with cured meats and savory cheeses. SERVE AT 10-12 °C FORMAT VINIFICATION A hand harvest is carried out in small crates; immediately follows a soft pressing of the whole Pinot Noir and Chardonnay grapes worked separately. The Pinot Noir is vinified only in steel, while the Chardonnay must ferments and ages in barriques for about 8 months before tirage. The separation from the yeasts and the preparation of the cuvée between Pinot Noir and Chardonnay takes place. The following spring it is bottled with the addition of selected yeasts (draught or froth). After a stay on the lees for at least 36 months, the manual remuage is carried out and then the disgorgement without the addition of the liqueur d'expedition. VINES Chardonnay and Pinot Noir grafted onto Kober 5BB, planting layout m. 2.20 x 0.80, guyot. PLANT DENSITY 5,000 plants per hectare CULTIVATION Short pruning, organic fertilization every two to three years, working the soil in alternate rows, drip irrigation only. Vineyards in organic cultivation with ICEA certification. PRODUCTION Does not exceed 9,000 kg/ha
